You could do it from first principles:

 

Remove coolant sender from car and connect to ohmmeter

Find a calibrated thermometer

Place both in boiling water

Note the resistance and the temperature

Allow water to cool, noting both values along the way.  You now have the cal curve for the sender

 

Find a number of fixed resistors at temperature points you'd like to mark on the gauge

Plug each in turn into the sender connector wire in the car's harness and the other end to ground

Each resistor will cause the gauge to deflect the appropriate amount.  Mark the gauge.
